  • 2 Heck chicken sausages (we like the Italia ones)
  • 2 bacon medallions
  • 1/2 a ripe vine plum tomato (thinly sliced)
  • 2 eggs (beaten)
  • small knob of butter
  • salt and pepper


  1. Place the chicken sausages under the grill on a medium heat for 3 minutes. Add the bacon to the same tray and turn the sausages.
  2. At the same time, place a small non-stick frying pan on a medium heat. When up to temperature add the butter and then once melted tip in the eggs and add a little salt and pepper.
  3. After a couple of minutes (when the edges of the omelette are cooked get flipping! Cook for a further minute and then set aside on a plate.
  4. Slice the sausages in half and place the bacon and sausages down the centre with the sliced tomato on top.
  5. Roll the whole thing into a beautiful wrap.
