On the menu for you and the kids this final week of Summer Holidays is the proper tasty Southern Baked Oaty Chicken, a lean version on the classic!

Served in soft tortilla with spinach and some salsa, they’re a clean treat that everyone will assume is naughty

  • 200g rolled oats
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 teaspoon mixed thyme
  • 1 teaspoon salt, optional
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon cajun spice
  • 1/4 teaspoon pepper
  • 4 chicken breasts cut into strips
  • 120ml cup milk
  • 2 tablespoons butter, melted
  • Preheat oven to 190’c/Gas mark 5
  • Add the oats and all spices into a plastic bag and mix around
  • Dip the chicken strips in milk and coat in the oat mix
  • Place on a lined baking tray and coat all pieces with he melted butter
  • Bake for 40-45 minutes turning occasionally until juices run clear
  • Serve in soft tortillas with spinach and salsa
