NO RULES BREAKFAST MUFFINS

Perfect breakfast meal preps should have no rules – these muffins are totally customisable, you can literally put anything in them! In this addition were going with feta and spinach.

Packing in 216 Calories/Protein 22/Carbs 5/Fat 12 and they reheat in 1 minute in the microwave, even better when fresh out of the oven! Recipe makes 3 muffins

Ingredients

  • 3 large eggs
  • 30g of feta
  • 1 large handful of spinach, finely chopped
  • Sprinkle of cheddar
  • Small knob of butter to line the tray

Directions

  1. Preheat oven to 175’c/Gas mark 5
  2. Line 3 slots on a muffin tin with a think layer of butter
  3. Beat the eggs and half fill 3 slots with egg
  4. Evenly distribute the feta and spinach into the slots with the egg
  5. Add the rest of the beaten egg into the mixture
  6. Stir and top with a sprinkle of cheddar
  7. Cook for 22-25 minutes turning the tray once. At the end of the time turn the muffins upside down and cook for a further 2 minutes
