SATURDAY NIGHT FAKEAWAY – 002 – MONGOLIAN CHICKEN

This one is super easy but requires precision, Its quick but you’ve got to be on the ball with the cooking.

For a treat swap the chicken for some beef medallion(get your butcher to trim off the fat)
Again we went to Asda and it works out at £6.57 for two people
MACROS (per portion)
CALORIES – 656/P-53/C-82/F-6
-Serves 2 people
-Prep time 15 minutes
-Cooking time 10 minutes
You will need:-
400g Chicken Breast £2.52
250ml of Light Soy £0.66
1/2 cup Light Brown Sugar £0.15
Small Thumb Sized Piece of Ginger £0.35
3 Cloves of Garlic 15p
2 Packets of Microwaveable Brown Rice 98p
1 Packet of Tenderstem Broccoli £1.50
1 TSP Chilli 5p
1/2 Lemon (Squeezed) 11p
METHOD
-Thinly slice your chicken breast into strips and set aside
-On a separate board, finely chop the ginger and crush the cloves of garlic and combine in a bowl
-In another bowl add the soy and 125ml of water
-Place a pan of water on to the hob and bring to the boil
-Heat a pan on the hob and add 10ml of oil
-Add the ginger and garlic to the pan and stir for 45 seconds before adding the soy/water mix and the brown sugar-bring to the boil
-Add the chicken to the sauce (cook for 4 minutes)
-In the pan of boiling water add your broccoli to the pan or place in a steamer above and cook for 5 minutes
-With two minutes to go microwave your rice
-You’ll know when the sauce is ready as it will thicken to a nice consistency*. Stir in the lemon right at the end
-Make sure to check the chicken is cooked through!
-Serve in bowls and even throw in a few prawn cracker!
*(If theres any extra sauce it’ll keep for 5 days at least!)
