LAMB KEEMA CURRY


Luscious, Luxurious, Lovely, Lamb!

Make this tasty, protein packed curry for this weeks fakeaway and you won’t be disappointed. I’ll be taking mine with some peshwari naan bread because they 100% count as part of your 5 a day.

  • 500g lean lamb mince
  • 50g diced onion
  • 25g ginger finely chopped
  • 25g garlic, crushed
  • 1 tsp garam masala
  • 1 tsp madras curry powder
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 250g chopped tomatoes
  • 50g tomato puree
  • 100g frozen peas
  • 10g red chilli
  • 100g 0% fat greek yoghurt
  • 1/2 lemon zest
  • 50g fresh coriander, chopped
  • Get a nice deep pan on a medium heat
  • Drop in a splash of oil and throw in the onion, garlic, ginger and spices, cook for 5 minutes till the onion is soft
  • Add the mince and brown for 5 minutes
  • Drop in the tomato paste and cook for another 5 minutes
  • Add the chopped tomatoes and allow to simmer for at least 35 minutes (longer if you have the time)
  • While thats cooking grab your lemon, zest it and place in the yoghurt and mix well. Place in the fridge.
  • When almost ready cook your rice and place in a bowl, add the fresh coriander to the rice and stir.
  • Season the curry with salt and pepper to taste.
  • Serve in bowls as shown, garnish with the chilli, coriander and yoghurt.

SOUTHERN BAKED OATY CHICKEN

On the menu for you and the kids this final week of Summer Holidays is the proper tasty Southern Baked Oaty Chicken, a lean version on the classic!

Served in soft tortilla with spinach and some salsa, they’re a clean treat that everyone will assume is naughty

  • 200g rolled oats
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 teaspoon mixed thyme
  • 1 teaspoon salt, optional
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon cajun spice
  • 1/4 teaspoon pepper
  • 4 chicken breasts cut into strips
  • 120ml cup milk
  • 2 tablespoons butter, melted
  • Preheat oven to 190’c/Gas mark 5
  • Add the oats and all spices into a plastic bag and mix around
  • Dip the chicken strips in milk and coat in the oat mix
  • Place on a lined baking tray and coat all pieces with he melted butter
  • Bake for 40-45 minutes turning occasionally until juices run clear
  • Serve in soft tortillas with spinach and salsa
