- 1 corn tortilla
- 200g black beans
- 1/2 ripe avocado
- 50g feta
- 1 large free range egg
- drizzle of sriracha
- 1 tbsp of sunflower oil
- sprinkle of chilli flakes
- 1 tsp lime juice
- Toast the corn tortilla under the grill for a few minutes on both sides
- Peel and slice the avocado.
- Crush the black beans with the back of a fork and drizzle with some lime juice
- Fry your egg in a little oil on a medium heat
- Assemble everything onto the tortilla with the egg at the centre. Drizzle with the sriracha and sprinkle chilli flakes.
