A simple recipe thats good all year round and makes the prefect meal prep box to make ahead of time!

Prep time – 10 minutes

Cook time – 45 minutes



150g of Quorn chicken pieces

1 teaspoon of chipotle paste

4 table spoons of bbq sauce

1/2 medium onion, thinly sliced

1 large sweet potato (150g)

50g spinach

50g kale

1 tsp olive oil

1 tsp ground cumin



Start by pricking the sweet potato all over and season with olive oil, salt and pepper and place in a pre-heated oven on the top shelf on 200 degrees (turn over after 20minutes)

Next mix the bbq and chipotle sauce and set aside

Fry the Quorn and thinly sliced onion in an oven proof pan for 5-10 minutes on a medium heat until the Quorn has browned and the onion is soft.

Pour on the bbq mixture and cook on the hob for 2 minutes and stir repeatedly

With 10 minutes left of the potato put the pan with the Quorn in on the middle shelf

Once the potato is cooked (it will be nice and soft to touch) remove from the oven and set aside, also remove the Quorn

In a separate pan heat a teaspoon of oil and place in the spinach and kale and wilt for 2 minutes, finish with a small sprinkle of chilli flakes

Slice the skin of the sweet potato and peel off, place the potato in a bowl and sprinkle with a pinch of cumin and mash with a fork

Place all of the ingredients into a bowl or Tupperware. Serving suggestion in the picture!!
