CHICKEN BREAST WITH CRISPY SKIN, CHORIZO RISOTTO & GRILLED VEGGIES


A family and cupboard friendly dish thats part store cupboard mash up, part gourmet food experience.

Ingredients

  • 2 french trim, skin on chicken breast (220g in this one)
  • 1 medium onion, thin dice
  • 230g arborio risotto rice
  • 100g picante chorizo, diced
  • 2 peppers, any colour
  • 1 medium courgette
  • 500ml vegetable stock
  • 2 tbsp tomato puree
  • 1 tsp smoked paprika
  • 1 tsp dried chilli flakes
  • 1 lemon
  • handful of fresh coriander
  • 2 tbsp sunflower oil
  • salt and pepper to taste

Directions

  • Heat a large pan and add 1 tbsp of oil, toss in the onion, paprika, chilli flakes and cook until softened. Add in the rice and cook for a minute or two to toast, then pop in half the stock & puree and allow to simmer
  • Grab a plate or tray with a j-cloth of paper towel and pop on the chicken breast skin side down to dry
  • In a separate pan sauté the chorizo until browned and set aside
  • Grab another pan (one that can go in the oven if you have it), heat the rest of the oil and pop the chicken in skin side down – season with salt and pepper first, cook like that for at least 4-5 minutes so the skin crisps, turn over to seal the other side for 2 minutes then pop in the oven to finish
  • Check the rice and add more stock if required(just a bit at a time now)
  • Cut the pepper into chunks and the courgette into thick slices and season, place under the grill to cook until softened.
  • When the chicken is ready the rice should be to, once its fluffy, add the chorizo back in with the herbs and the lemon juice, stir through and add salt and pepper to serve
  • Slice the chicken breast in half and pop the veggies around the risotto and pretend you’re in a fancy restaurant thats allowed to be open in a few months time.
